No-Bake Ginger Protein Bites

i’m still on the ginger kick, can you tell? first it was the ginger cookies, and now we’re onto the ginger protein bites.

i’ve been wanting to make these forever after i spotted them on a favorite instagram of mine. so, finally, here we are…

they are delicious! and the perfect snack to tide you over. they can pass as breakfast or even dessert.

they contain lots of protein and healthy fats. between the protein powder, hemp seeds, as well as the nut butters andchiaseeds, these bites are packed with the good stuff. you can use any vanilla-based protein powder you want. my store-bought favorites are: sunwarrior, vega, hemp pro, garden of life, amazing grass, plant fusion, and the whole foods brand. my protein powder mindful tip is to steer clear of whey and soy isolate.

start by soaking the dates in warm water for about 15 minutes. also, mix the chia seeds with 1/3 of cup of water. if you don’t have a food processor you can use the vitamix {like i did} to ground up the almonds.

next blend the dates so they become a paste-like consistency and combine all ingredients in a bowl. i’m sure you couldcombine everything in a food process or other type of mixer, but i did it the old fashioned way and used my hands.

then create 2-3 bite-sized balls. they come out the size of a golf ball. place in the freezer and you are done-zo! simple as that. i stored mine in a tupperware and reached for one when i needed a little energy boost or snack, or even when i was craving something sweet.

  • 4 medjool dates soaked in hot water for 15 minutes
  • 2 scoops vanilla protein powder (of your choosing)
  • 3 tablespoons of chia seeds soaked in 1/3 cup water
  • 3 tablespoons hemp seeds
  • 3 tablespoons of wildfriends gingerbread peanut butter
  • 1/2 cup dry roasted unsalted almonds chopped in food processor or blender
  • optional: pink of ginger powder and/or cinnamon
  1. mix all ingredients together and form into balls
  2. store in a sealed container in the freezer
